This thesis studies the arithmetic aspects of Del Pezzo surfaces of degree 1, 2, and 3 defined over number fields. Through the construction of explicit models and the analysis of exceptional curves, the arithmetic Picard rank and its behavior under suitable specializations are studied. In particular, a family of surfaces is identified for which it is proven that the arithmetic Picard rank over $\mathbb{Q}$ cannot be further increased within the framework of the considered construction. Furthermore, the study of the arithmetic Picard rank allows obtaining Del Pezzo surfaces of degree 2 and 3 to which known criteria of unirationality apply; through the explicit birational transformations developed in the course of the thesis, these results are finally transferred to the corresponding surfaces of degree 1. It is further shown that the Hilbert property holds in a suitable field extension.
Questa tesi studia gli aspetti aritmetici delle superfici di Del Pezzo di grado 1, 2 e 3 definite su campi di numeri. Mediante la costruzione di modelli espliciti e l'analisi delle curve eccezionali, si studia il rango di Picard aritmetico e il suo comportamento sotto opportune specializzazioni. In particolare, viene individuata una famiglia di superfici per la quale si dimostra che il rango di Picard aritmetico su $\mathbb{Q}$ non può essere ulteriormente aumentato nell'ambito della costruzione considerata. Lo studio del rango di Picard aritmetico permette inoltre di ottenere superfici di Del Pezzo di grado 2 e 3 alle quali si applicano criteri noti di unirazionalità; attraverso le trasformazioni birazionali esplicite sviluppate nel corso della tesi, tali risultati vengono infine trasferiti alle corrispondenti superfici di grado 1. Si dimostra in oltre che in un opportuna estensione di campo vale anche la proprietà di Hilbert.
