Hazard Analysis and Critical Control Point (HACCP) procedures have traditionally been managed using paper-based documentation. This approach limits real-time intervention, slows traceability and product-recall processes, and restricts systematic data analysis and trend monitoring. This thesis presents the development of a standard Manufacturing Execution System (MES) template for the digital management of HACCP procedures in the food industry. The template was implemented using the TrakSYS platform by Parsec and was designed to support reuse and adaptation across different food-product families. A general User Requirements Specification (URS) was first developed to identify common HACCP-related requirements in food manufacturing. Additional product-family-specific URSs were then defined to capture process-dependent requirements. Based on these specifications, the template was designed to manage control points (CPs) and critical control points (CCPs), including their associated critical limits, monitoring activities, deviations, and corrective actions. The critical limits and control logic were defined according to applicable European legislation and process-specific requirements. These requirements were implemented in TrakSYS using platform-native functionalities and custom C# components, in collaboration with Autoware S.r.l. The resulting template provides a structured basis for replacing paper-based HACCP records with digital workflows, enabling real-time monitoring, improved traceability, standardised data collection, and subsequent analysis of process trends.

Abstract
The resulting template provides a structured basis for replacing paper-based HACCP records with digital workflows, enabling real-time monitoring, improved traceability, standardised data collection, and subsequent analysis of process trends.| File | Dimensione | Formato | |
