The thesis consists in a systematic literature review, aiming to develop a theoretical framework on wine tourism innovations. Innovation is almost the critical point for the winery, not only for the management in the winemaking (Primary industry), but also for the exploitation of wine tourism (Tertiary Industry). Innovations enable producers to maintain their competitiveness in this niche market, to enters in new markets, to increase customer satisfaction, as well as to follow sustainability practices. In addition to the benefit for wineries, innovations affect (and may be driven by) several other actors on the territory, with the potential of benefiting the local economy in general. The purpose of this review is to analyze the different types of innovations that emerged in the wine sector, as portrayed by the scientific literature, as well as to examine the most recent trends in new technologies, as external factors that affect the operation and new business strategies of supply-side stakeholders.
