Excessive red meat consumption is a dietary behavior associated with adverse health outcomes. The present study aimed to investigate the psychosocial variables associated with consuming no more than one portion of red meat per week. To this end, the predictive power of the Theory of planned behavior (Ajzen, 1991), extended by including past behavior and self-identity as a healthy eater, was examined. The study consisted of two phases (T1 and T2), during which two online questionnaires were administered to a convenience sample of 712 Italian university students who consumed meat (mean age 22 years; 61% women). At T1, the constructs of the extended Theory of planned behavior were assessed, whereas at T2 participants reported their red meat consumption during the previous month. The results of the multiple regression analyses showed that the extended TPB model explained 54% of the variance in intention and 41% of the variance in red meat consumption at T2. Significant predictors of intention were gender, affective attitude, cognitive attitude, subjective norm, and perceived behavioral control. Past red meat consumption was also a significant negative predictor of the intention to consume no more than one portion of red meat per week. Significant predictors of red meat consumption at T2 were past behavior, intention, and perceived behavioral control. Gender was associated with both intention and behavior: women reported a stronger intention to consume no more than one portion of red meat per week and reported lower red meat consumption at T2 than men. These findings provide useful insights for the development of interventions aimed at promoting healthier dietary choices and reducing red meat consumption to protect individual health.

Il consumo eccessivo di carne rossa rappresenta un comportamento alimentare associato a conseguenze negative per la salute individuale. La presente ricerca si propone di indagare le variabili psicosociali associate al consumare al massimo una porzione di carne rossa a settimana. A questo proposito, è stato testato il potere predittivo della Teoria del comportamento pianificato ( Ajzen, 1991), estesa con il comportamento passato e con la self-identity intesa come persona che mangia sano. Lo studio ha previsto due fasi (T1 e T2), durante le quali sono stati somministrati due questionari online a un campione di convenienza composto da 712 studenti universitari italiani (età media 22; anni; 61% donne) che consumavano la carne. Al T1, sono stati misurati i costrutti della TPB estesa; al T2 è stato rilevato il consumo auto-riferito di carne rossa nel mese precedente. I risultati relativi alle analisi di regressione multipla mostrano che il modello esteso della TPB spiega il 54% della varianza dell’intenzione e il 41% della varianza del comportamento rilevato al T2. I predittori significativi dell’intenzione risultano essere il genere, l’atteggiamento affettivo e cognitivo, la norma soggettiva e il controllo comportamentale percepito. Il consumo passato di carne rossa influenza significativamente e negativamente l’intenzione di consumare al massimo una porzione di carne rossa alla settimana. I predittori significativi del comportamento di consumo di carne rossa al T2 risultano essere il comportamento passato, l’intenzione e il controllo comportamentale percepito. Il genere è associato all’intenzione e al comportamento: le donne mostrano un’intenzione più forte di consumare una porzione di carne rossa a una porzione a settimana e dichiarano di consumarne quantità inferiori al T2 rispetto agli uomini. I risultati offrono indicazioni utili per lo sviluppo di interventi mirati a promuovere scelte alimentari volte alla salvaguardia della salute individuale.
