Over the past two decades, the number of Chinese restaurants in Italy has increased rapidly. The phenomenon of localization has inevitably arisen, in the sense that the Chinese dish has changed presentation, original taste, and order in serving the dishes. The Chinese dish localization phenomenon is summed up in some reasons through this research. However, the Chinese restaurant is changing. Chinese cuisine started returning to the "original" taste. With the lockdown during COVID, the catering sector had to adapt to the situation following the numerous restrictions that followed one another throughout 2020 and 2021. Many restaurants have suffered heavy losses but generally have actively dealt with everything that happened in the pandemic months. Under various pressures, they took steps to address the situation. The epidemic of the last two years has caused damage to those restaurants that had already opened before the epidemic, but fortunately survived the difficulties with the help of the Italian government and consumers and by successfully changing their operating models.
Negli ultimi due decenni, il numero di ristoranti cinesi in Italia è aumentato velocemente. È inevitabile che si sia manifestato il fenomeno della localizzazione, nel senso che il piatto cinese ha cambiato presentazione, gusto originale e ordine nel servire le portate. Attraverso questa ricerca, il fenomeno di localizzazione del piatto cinese ha riassunto nei alcuni motivi. Tuttavia, il ristorante cinese stano cambiando. La cucina cinese iniziato a tornare al gusto “originale”. Il lockdown durante il COVID, a seguito delle numerose restrizioni susseguitesi durante tutto il 2020 e il 2021, il settore di ristorazione ha dovuto adattarsi alla situazione, molti ristoranti hanno subito pesanti perdite però in genere hanno affrontato attivamente tutto ciò che è successo nei mesi della pandemia. Sotto diverse pressioni, hanno preso delle misure per affrontare la situazione. L’epidemia degli ultimi due anni ha provocato un danno ai quei ristoranti che avevano già aperto prima dell’epidemia, ma che per fortuna sono sopravvissuti alle difficoltà con l’aiuto del governo italiano e dei consumatori e cambiando i loro modelli operativi con successo.
