Eosinophilic gastrointestinal diseases (EGID) are immune-mediated chronic diseases of unknown etiology, histologically characterized by the selective infiltration of eosinophils of one or more segments of the gastrointestinal tract in the absence of secondary causes of gastrointestinal eosinophilia, leading to nonspecific clinical manifestations according to to the site involved in the accumulation of eosinophils. Although their pathogenic mechanisms are mostly unknown, EGIDs appear to be commonly associated with atopy. EGIDs are increasingly common diseases in the last decade and have a substantial impact on the quality of life of patients. The accumulation of eosinophils in the gastrointestinal tract is a common feature of numerous gastrointestinal and non-gastrointestinal disorders with similar clinics but with different etiopathogenesis, which requires a targeted differential diagnosis that allows us to diagnose the disease in advance of the onset of unpleasant complications and knowing how to give the most suitable care and treatment to slow down or block the development of undesirable consequences.
