La food supply chain in italia: l'industria della carne

This thesis work aims to analyze the food supply chain in Italy, with particular attention to the meat supply chain. An analysis of the functioning of the Italian food supply chain will be considered, taking as reference the case study "THE CHICKEN SUPPLY CHAIN ​​IN CANADA: MATERIAL FLOW AND SUPPLY STRUCTURE" (Choi et al., 2022). Through an overview of the process and its phases, starting from the producers up to the organization and distribution channels with the related points of sale, we want to provide a picture of the critical issues and opportunities of logistics in the Italian agri-food industry. Subsequently, the material flow analysis will make it possible to identify any prospects and future developments in the field of sustainability. This study aims to contextualize, in a very unstable scenario such as the contemporary one, also very current topics useful for understanding the meat supply chain and the consequences on the final customer, such as the environmental impacts and secondary uses of industry by-products, as well as the introduction of synthetic meat and consumer perception on this issue.

Il presente lavoro di tesi si propone di analizzare la food supply chain in Italia, con una particolare attenzione alla filiera della carne. Verrà presa in considerazione un’analisi del funzionamento della catena di approvvigionamento alimentare italiana, prendendo come riferimento il caso di studio “THE CHICKEN SUPPLY CHAIN IN CANADA: MATERIAL FLOW AND SUPPLY STRUCTURE” (Choi et al., 2022). Attraverso una panoramica sul processo e le sue fasi, partendo dai produttori fino all'organizzazione e ai canali di distribuzione con i relativi punti vendita, si vuole fornire un quadro delle criticità e le opportunità della logistica nell’industria agroalimentare italiana. Successivamente, la material flow analysis permetterà di individuare eventuali prospettive e futuri sviluppi nel campo della sostenibilità. Questo studio mira a contestualizzare, in uno scenario molto instabile come quello contemporaneo, anche temi molto attuali utili per la comprensione della meat supply chain e le conseguenze sul cliente finale, come gli impatti ambientali e gli usi secondari dei sottoprodotti dell’industria, nonché che l’introduzione della carne sintetica e la percezione dei consumatori su questo tema.
