Sostenibilità e sicurezza alimentare: le politiche di nudging

The Bachelor’s thesis "sustainability and food safety: nudging policies" concerns issues related to sustainability in the food sector. You can see Italy's progress and recessions regarding the objectives of the 2030 Agenda, through the data published by ISTAT. A definition of global health is introduced and food security, an important element of global health, is defined. After a brief sub-chapter that delves into cellular-based foods, the phenomenon of food waste is analysed. The negative externalities of food systems on the environment, health and economic aspect are considered. The last chapter focuses on nudge policies.

La tesi triennale "sostenibilità e sicurezza alimentare: le politiche di nudging" riguarda le problematiche correlate alla sostenibilità nell'ambito alimentare. Si vedono i progressi e le recessioni dell'Italia riguardo agli obiettivi dell'Agenda 2030, tramite i dati pubblicati dall'ISTAT. Viene introdotta una definizione di salute globale e si definisce la sicurezza alimentare, un elemento importante della salute globale. Dopo un breve sotto-capitolo che approfondisce gli alimenti prodotti a base cellulare, si analizza il fenomeno dello spreco alimentare. Sono considerate le esternalità negative dei sistemi alimentari sull'ambiente, la salute e rispetto all'aspetto economico. L'ultimo capitolo si focalizza sulle politiche di nudging.
