The present research aims to examine the growing distinction between traditional and contemporary pizza, delving into the sociotechnical transformations contributing to such differentiation. Through the analysis of existing differences between these two culinary approaches, the goal is to overcome the dichotomy between tradition and modernity, backwardness and innovation, highlighting science as a unifying element between the two contexts. The thesis aims to demonstrate that the transition of pizza from traditional to contemporary forms is the result of a shift in culinary practices from a context characterized by variety and plurality to one oriented towards standardization and uniqueness.
Il presente lavoro di ricerca si propone di esaminare la crescente distinzione tra la pizza tradizionale e quella contemporanea, approfondendo le trasformazioni sociotecniche che contribuiscono a tale differenziazione. Attraverso l'analisi delle differenze esistenti tra questi due approcci culinari, l'obiettivo è superare la dicotomia tra tradizione e modernità, arretratezza e innovazione, evidenziando la scienza come elemento unificante fra i due contesti. La tesi mira a dimostrare che la transizione della pizza dalla forma tradizionale a quella contemporanea è il risultato del passaggio, nelle pratiche culinarie, da un contesto caratterizzato da varietà e pluralità a uno improntato alla standardizzazione e all'unicità.
