The following thesis work aims to investigate the trends relating to meat consumption on a vast and varied sample of the population in Italy in order to research future alternatives to this food with the greatest potential for use, taking into account variables such as the subjects' diet, their beliefs and tendencies in related areas, which can be indicators of their meat consumption and eating habits and beliefs even more generally. The alternatives on which the work focuses are specifically: products derived from insects, jellyfish and artificially developed meat, therefore alternatives on which research dedicated to development and, subsequently, marketing is still underway today, or products that are temporarily unavailable for purchase by the wider population and which require further studies before being included among commonly available foods.
Il seguente lavoro di tesi si pone l'obbiettivo di indagare le tendenze relative al consumo di carne su un vasto e vario campione di popolazione sul territorio italiano al fine di ricercare le alternative future a questo alimento con il maggiore prospetto di utilizzo, tenendo conto di variabili come la dieta dei soggetti, le loro credenze e tendenze in ambiti correlati, che possono essere indici del loro consumo di carne e abitudini e convinzioni alimentari anche più in generale. Le alternative su cui si concentra il lavoro sono nello specifico: prodotti derivati da insetti, meduse e carne sviluppata artificialmente, dunque alternative su cui è ancora in corso ad oggi una ricerca dedita allo sviluppo e, successivamente, alla commercializzazione, ovvero prodotti momentaneamente non disponibili per l'acquisto da parte della popolazione allargata e che necessitano ulteriori studi prima di poter rientrare tra gli alimenti comunemente reperibili.
