This master thesis aims to critically examine the relationship between the consumption of ultra-processed foods and the epidemiology of obesity. The study will review and synthesize existing literature on the definitions, classifications, and characteristics of ultra-processed foods, analyse epidemiological studies linking the consumption of ultra-processed foods to the prevalence and incidence of obesity, explore potential mechanisms underlying the association between ultra-processed food consumption and obesity, discuss the public health implications of the relationship between ultra-processed foods and obesity, propose recommendations for future research directions and public health interventions aimed at reducing the consumption of ultra-processed foods and preventing obesity, and identify knowledge gaps and areas for further investigation.
Questa tesi di laurea magistrale si propone di esaminare criticamente la relazione tra il consumo di cibi ultra-processati e l'epidemiologia dell'obesità. Lo studio rivedrà e sintetizzerà la letteratura esistente sulle definizioni, classificazioni e caratteristiche dei cibi ultra-processati, analizzerà studi epidemiologici che collegano il consumo di cibi ultra- processati alla prevalenza e all'incidenza dell'obesità, esplorerà i meccanismi potenziali alla base dell'associazione tra il consumo di cibi ultra-processati e l'obesità, discuterà le implicazioni per la salute pubblica della relazione tra cibi ultra-processati e obesità, proporrà raccomandazioni per future direzioni di ricerca e interventi per la salute pubblica mirati a ridurre il consumo di cibi ultra-processati e prevenire l'obesità, e identificherà le lacune di conoscenza e le aree per ulteriori indagini.
