The aim of this thesis is to explore the application of Lean Manufacturing techniques in the food sector, an industry characterized by high standards of quality, safety and regulatory compliance. Traditionally developed in the manufacturing sector, Lean Manufacturing aims to reduce waste, improve production efficiency and optimize company resources. This work analyzes how these principles can be adapted and implemented in food production contexts, where variables such as product perishability, seasonality of raw materials and strict hygiene requirements require a customized approach. The research is based on real case studies in Italian food companies that have adopted Lean methodologies, highlighting the challenges and benefits obtained, with particular attention to increasing quality, reducing production times and decreasing waste. Key Lean tools, such as *5S* and *SMED*, are analyzed, evaluating their effectiveness in improving business processes and workflow. The results demonstrate that the adoption of Lean techniques in the food sector leads to significant improvements in terms of efficiency, flexibility and sustainability. The thesis concludes by highlighting the importance of a tailored approach, taking into account the specificities of the sector, and the need for a cultural change at company level to ensure the success of Lean implementation.
L'obiettivo di questa tesi è esplorare l'applicazione delle tecniche di Lean Manufacturing nel settore alimentare, un'industria caratterizzata da elevati standard di qualità, sicurezza e conformità normativa. Tradizionalmente sviluppato nel settore manifatturiero, il Lean Manufacturing mira a ridurre gli sprechi, migliorare l'efficienza produttiva e ottimizzare le risorse aziendali. Questo lavoro analizza come questi principi possano essere adattati e implementati in contesti produttivi alimentari, dove variabili come la deperibilità dei prodotti, la stagionalità delle materie prime e i rigorosi requisiti igienico-sanitari richiedono un approccio personalizzato. La ricerca si basa su casi studio reali in aziende alimentari italiane che hanno adottato metodologie Lean, mettendo in luce le sfide e i benefici ottenuti, con particolare attenzione all'incremento della qualità, alla riduzione dei tempi di produzione e alla diminuzione degli sprechi. Vengono analizzati strumenti chiave del Lean, come il *5S* e la *SMED*, valutando la loro efficacia nel migliorare i processi aziendali e il flusso di lavoro. I risultati dimostrano che l'adozione di tecniche Lean nel settore alimentare porta a significativi miglioramenti in termini di efficienza, flessibilità e sostenibilità. La tesi conclude sottolineando l'importanza di un approccio su misura, che tenga conto delle specificità del settore, e la necessità di un cambiamento culturale a livello aziendale per garantire il successo dell'implementazione Lean.
