The thesis project has been carried out at the toxicology laboratory of the University of Tenerife. 20 samples of chia seeds, typically sold in supermarkets or in the online distribution,have been considered and it has been determined the content of certain metals of nutritional and toxicological interest with the Inductively Coupled Plasma Optical Emission Spectrometry (ICP-OES) method. In the end, it has been determined the risk assessment of dietary exposure to these metals through the intake of chia seeds, according to the recommendations and established intake limits.
