This work illustrates the analytical techniques used to identify substances that are not permitted or permitted with restrictions in organic viticulture, in accordance with national and European Union (EU) regulations. The objective is to describe in detail how the analyses are carried out for each substance, following the official methods published by the OIV (International Organisation of Vine and Wine), and to analyse possible alternatives to prohibited substances, highlighting their applications in oenology. The research is based on knowledge acquired during the course of studies, supplemented with data from scientific literature, research databases and websites specialising in oenology and sector legislation.
l presente lavoro illustra le tecniche di analisi utilizzate per identificare le sostanze non ammesse o ammesse con limitazioni nella viticoltura biologica, in conformità con le normative nazionali e comunitarie dell'Unione Europea (UE). L'obiettivo è descrivere nel dettaglio le modalità di esecuzione delle analisi per ciascuna sostanza, seguendo i metodi ufficiali pubblicati dall'OIV (Organizzazione Internazionale della Vigna e del Vino), e analizzare le possibili alternative alle sostanze vietate, evidenziando le loro applicazioni in enologia. La ricerca si basa sulle conoscenze acquisite durante il percorso di studi, integrate con dati provenienti da letteratura scientifica, database di ricerca e siti web specializzati in enologia e normativa di settore.
