Perfluoroalkyl and polyfluoroalkyl substances (PFAS) are a class of synthetic chemical compounds used in many industrial processes due to their chemical and thermal stability, as well as their lipophobic and hydrophobic properties. Materials containing PFAS are employed across dozens of sectors, including firefighting foams, pesticide and cosmetic formulations, textile waterproofing, oil production, and food packaging. However, these substances pose a risk to the environment and human health because of their persistence, toxicity, and ability to bioaccumulate. This thesis will discuss the evidence of accumulation of these substances in the human body, describing the analytical methods used in various biological matrices such as blood, serum, hair, and urine. Furthermore, it will summarize the established scientific evidence of diseases and adverse effects caused by PFAS exposure.
Le sostanze perfluoroalchiliche e polifluoroalchiliche (PFAS), sono una classe di composti chimici sintetici che vengono impiegati in molti processi industriali, per la loro stabilità chimica e termica e per le loro proprietà lipofobiche e idrofobiche. I materiali contenenti PFAS sono utilizzati in decine di settori diversi, per esempio nelle schiume antincendio, nei formulati di pesticidi e cosmetici, nell’impermeabilizzazione tessile e produzione di petrolio, ma anche imballaggi alimentari. Tuttavia, queste sostanze rappresentano un rischio per l’ambiente e per gli esseri umani, a causa della persistenza, tossicità e capacità di essere bioaccumulati. In questo elaborato di tesi verranno discusse le evidenze di accumulo di queste sostanze nel corpo umano, descrivendo i metodi di analisi in alcune matrici biologiche come sangue, siero, capelli e urine. Verranno riassunte, inoltre, le evidenze scientifiche consolidate di patologie ed effetti avversi che queste sostanze provocano.
