This thesis aims to explore the critical issues of the contemporary food system by analyzing its environmental and social implications and proposing pedagogical horizons oriented toward sustainability and change. The first chapter outlines the framework of the modern agri-food system, highlighting its contradictions: from the spread of intensive livestock farming to the crisis of soil fertility. The second chapter delves into the dynamics that govern food production and distribution, examining phenomena such as land grabbing, the role of multinational corporations, tensions surrounding the European Green Deal, and the limitations of the 2030 Agenda, adopting a critical perspective inspired by Serge Latouche's theory of degrowth. The third chapter addresses the educational dimension of food sustainability, focusing on the role of individual and collective behaviors, presenting an empirical survey through a questionnaire, and offering pedagogical reflections on food as a transformative, political, and conscious practice. The thesis seeks to contribute to the debate on sustainability education, understood as a fundamental lever for fostering active and responsible citizenship in relation to food and the future of the planet.
La tesi vuole esplorare le criticità del sistema alimentare contemporaneo, analizzandone le implicazioni ambientali e sociali, proponendo orizzonti pedagogici orientati alla sostenibilità e al cambiamento. Nel primo capitolo, viene delineato il quadro del sistema agroalimentare moderno, evidenziandone le contraddizioni: dalla diffusione dell’allevamento intensivo fino alla crisi della fertilità del suolo. Il secondo capitolo approfondisce le dinamiche che regolano la produzione e la distribuzione del cibo, analizzando fenomeni come l’accaparramento delle terre, il ruolo delle multinazionali, le tensioni intorno al Green Deal europeo e i limiti dell’Agenda 2030, in un’ottica critica ispirata alla decrescita di Serge Latouche. Il terzo capitolo affronta la dimensione educativa della sostenibilità alimentare, soffermandosi sul ruolo dei comportamenti individuali e collettivi, presentando un’indagine empirica tramite questionario, e proponendo riflessioni pedagogiche sull’alimentazione come pratica trasformativa, politica e consapevole. La tesi si propone di contribuire al dibattito sull’educazione alla sostenibilità, intesa come leva fondamentale per promuovere una cittadinanza attiva e responsabile in relazione al cibo e al futuro del pianeta.
