In a context where growing consumer awareness and sensitivity towards the environment and animals is driving the consumption of plant-based food substitutes of meat and other animal products, this study aims to describe the emergence, evolution, and future prospects of these products in Italy. Through case studies and market data analysis, the characteristics of these products will be identified and presented, including comparisons with equivalent non-plant-based products. To studying and describing characteristics such as price, distribution, and assortment, the thesis will seek to describe the positive and negative externalities of the production and distribution of these products, highlighting the differences between them and the animal-based food sector.
In un contesto in cui la crescente consapevolezza e sensibilità dei consumatori nei confronti dell'ambiente e degli animali sta facendo crescere il consumo di prodotti alimentari sostituti vegetali della carne e di altri derivati animali, questo studio si propone di descrivere la nascita, l'evoluzione e le prospettive future di questo mercato in Italia. Attraverso casi di studio e analisi dei dati di mercato, verranno identificate e presentate le caratteristiche di questi prodotti, anche in comparazione con i prodotti non palnt-based equivalenti. Oltre a studiare e descrivere caratteristiche come prezzo, distribuzione e assortimento, la tesi cercherà di evidenziare le esternalità positive e negative della produzione e della commercializzazione di questi prodotti, evidenziando anche le differenze tra questi e il settore degli alimenti di origine animale.
