This thesis analyses changes in food choices between Generation X (1965-1980) and Generation Z (1996-2010), with a focus on the spread of plant-based diets. Food is considered not only as a biological necessity, but also as a reflection of cultural, social and economic transformations. Through qualitative interviews, this study shows how Generation Z tends to prefer more sustainable food choices than Generation X.
Questa tesi analizza i cambiamenti nelle scelte alimentari tra la Generazione X (1965-1980) e la Generazione Z (1996-2010), con particolare attenzione alla diffusione di diete plant-based. L’alimentazione viene considerata non solo come necessità biologica, ma anche come riflesso di trasformazioni culturali, sociali ed economiche. Attraverso interviste qualitative, il lavoro mostra come la Generazione Z tenda a preferire scelte alimentari più sostenibili rispetto alla Generazione X.
