Honey is a complex natural product with high nutritional and functional value, whose chemical composition and qualitative characteristics are strongly influenced by several factors, including botanical origin, geographical provenance and pedoclimatic conditions. In this context, the Mediterranean area is a region of particular interest for beekeeping, thanks to its high plant biodiversity and environmental heterogeneity, which contribute to a significant qualitative variability in honey. This variability requires an accurate and thorough characterization of the product, which is essential to ensure quality, traceability, commercial value and the prevention of food fraud. However, the high commercial value of these products exposes them to increasing risk of fraud ad adulteration, making advanced analytucal methods necessary to guarantee authenticity and traceability. The aim of this thesis is to characterize the variability of the main quality parameters of commecial honeys from the Mediterranean area, with specific reference to botanical types such as acacia, polyfloral, linden, chestnut, and lavender. The study involved the integration of traditional physico-chemical analyses, (moisture content, pH, electrical conductivity, diastase activity and melissopalynological analysis) with advanced instrumental techniques. In particulas, the use of High-Performance Liquid Chromatography (HPLC) was explored for sugar profiling and the search for marker compounds. The data obtained were processed using chemometric analysis to evaluate the compliance of the samples with international standards and to define distinctive physico-chemical prfiles for the different botanical and feograpghical origins considered. This approach contributes to the enhancement and protection of Mediterranean honey production.
Il miele è un prodotto alimentare di elevato valore nutrizionale e funzionale, la cui composizione chimica e le caratteristiche qualitative sono fortemente influenzate da numerosi fattori, tra cui l’origine botanica, la provenienza geografica e le condizioni pedoclimatiche. In questo contesto, l’area del Mediterraneo rappresenta un territorio di particolare interesse per la produzione apistica, grazie all’elevata biodiversità vegetale e alla marcata eterogeneità ambientale, che contribuiscono a una significativa variabilità qualitativa dei mieli. Tale variabilità rende necessaria una corretta e approfondita caratterizzazione del prodotto, fondamentale per garantire la qualità, la tracciabilità, la valorizzazione commerciale e il contrasto alle frodi alimentari. Tuttavia, l’elevato valore commerciale di tali produzioni le espone a crescenti rischi di frode e adulterazione, rendendo necessarie metodiche di analisi avanzate per garantire l’autenticità e la tracciabilità. Il presente lavoro di tesi si pone l’obiettivo di caratterizzare la variabilità dei principali parametri qualitativi di mieli commerciali provenienti dall’area mediterranea, con specifico riferimento alle tipologie botaniche di acacia, millefiori, tiglio, castagno e lavanda. Lo studio ha previso l’integrazione di analisi chimico-fisiche tradizionali (umidità, pH, conducibilità elettrica, attività diastatica e analisi melissopalinologica) con tecniche strumentali avanzate. In particolare, è stato approfondito l’impiego della cromatografia liquida ad alte prestazioni (HPLC) per la profilazione zuccherina e la ricerca di composti marcatori. I dati ottenuti sono stati elaborati mediante analisi chemiometrica al fine di valutare la conformità dei campioni rispetto agli standard internazionali e di definire profili chimico-fisici distintivi per le diverse origini botaniche e geografiche considerate, contribuendo cosi alla valorizzazione alla protezione delle produzioni del mediterraneo.
