This thesis investigates the dynamics of the Prosecco DOC market by integrating economic analysis, consumer behaviour, and dynamic modelling. After outlining the evolution of the global and Italian wine sector, with particular emphasis on the rapid growth of the sparkling wine category, the study focuses on the structural, historical, and economic characteristics of the Prosecco DOC denomination and on the strategic role of the Prosecco DOC Consortium in monitoring and regulating the market. The core objective of the research is the validation of the Prosecco DOC demand model developed by the Consortium in collaboration with the University of Padua, a tool designed to support the denomination through forecasting capabilities embedded in a Decision Dashboard. The methodology combines a review of scientific literature, analysis of official data provided by the Consortium, a consumer survey created to parameterize the model, and the implementation of dynamic simulations using the Vensim software. Four forecasting scenarios (an inflation scenario, a price-reduction scenario, a holiday consumption peak scenario, and a reputation-enhancement scenario) are developed to test the model’s responsiveness to economic and perceptual shocks. The results confirm that the model is valid and capable of reliably reproducing demand patterns and consumer reactions across different market conditions. A key limitation of the study lies in the fact that the model has been validated exclusively within the Italian mass retail channel, which, although dominant, does not represent the entire market structure. Future applications should therefore extend the model to additional distribution channels such as Ho.Re.Ca., E-commerce, and direct/private sales, as well as adapt it to international markets. Such developments would enhance the model’s predictive accuracy and reinforce its strategic value. Overall, the research demonstrates that dynamic modelling can serve as an effective tool for market stabilization and supply governance, aligning with the powers granted to consortia under Italian Law 238/2016. The validated model represents a solid foundation for supporting long-term strategic planning, safeguarding market equilibrium, and sustaining the global competitiveness of the Prosecco DOC denomination.
Questa tesi analizza le dinamiche del mercato del Prosecco DOC integrando analisi economica, comportamento del consumatore e modellizzazione dinamica. Dopo aver delineato l’evoluzione del settore vinicolo globale e italiano, con particolare attenzione alla rapida crescita della categoria degli spumanti, lo studio si concentra sulle caratteristiche strutturali, storiche ed economiche della denominazione Prosecco DOC e sul ruolo strategico del Consorzio di Tutela nell’attività di monitoraggio e regolazione del mercato. L’obiettivo centrale della ricerca è la validazione del modello di domanda del Prosecco DOC sviluppato dal Consorzio in collaborazione con l’Università di Padova, uno strumento progettato per supportare la denominazione attraverso capacità previsionali integrate in una Decision Dashboard. La metodologia combina una revisione della letteratura scientifica, l’analisi dei dati ufficiali forniti dal Consorzio, un’indagine sui consumatori creata per parametrizzare il modello e l’implementazione di simulazioni dinamiche mediante il software Vensim. Sono stati sviluppati quattro scenari previsionali (uno scenario di inflazione, uno di riduzione dei prezzi, uno di picco dei consumi durante le festività e uno di miglioramento della reputazione) per testare la reattività del modello a shock economici e percettivi. I risultati confermano che il modello è valido e in grado di riprodurre in modo affidabile l’andamento della domanda e le reazioni dei consumatori in diverse condizioni di mercato. Una limitazione rilevante dello studio risiede nel fatto che il modello è stato validato esclusivamente nel canale della grande distribuzione italiana che, sebbene dominante, non rappresenta l’intera struttura di mercato. Le applicazioni future dovrebbero dunque estendere il modello ad altri canali distributivi, come Ho.Re.Ca., e-commerce e vendite dirette/private, oltre che adattarlo ai mercati internazionali. Tali sviluppi migliorerebbero l’accuratezza predittiva del modello e ne rafforzerebbero il valore strategico. Nel complesso, la ricerca dimostra che la modellizzazione dinamica può rappresentare uno strumento efficace per la stabilizzazione del mercato e la governance dell’offerta, in linea con le prerogative attribuite ai consorzi dalla Legge italiana 238/2016. Il modello validato costituisce una base solida per supportare la pianificazione strategica di lungo periodo, salvaguardare l’equilibrio di mercato e sostenere la competitività globale della denominazione Prosecco DOC.
