The increase in greenhouse gases in the atmosphere has caused rising temperatures, changes in growing seasons, a reduction in biodiversity, and an increased frequency of extreme weather events such as droughts, floods, and heat waves. Climate change represents a challenge for agriculture, and specifically for viticulture. This thesis focuses on describing the variations in the qualitative characteristics of grapevine fruit—the bunch—and how they are influenced by abiotic factors present in the plant's environment, as well as the techniques that can be used to counteract them. The introduction describes the grapevine plant and its characteristics. The first chapter describes abiotic factors and the factors that affect grape quality, namely CO2, temperature, water availability, and solar radiation. The second chapter describes climate change in Italy and globally and its effects on the chemical and organoleptic composition of grapes, examining each individual factor from a scientific perspective. The third chapter discusses the consequences of water stress, such as increased soil salinity, and the damage it causes to fruit quality. It also describes the use of controlled water deficit techniques and the benefits it brings to berry quality. The fourth chapter describes the vine's hormonal response to stress; among the regulatory hormones, the most important is abscisic acid (ABA). Finally, the fifth chapter describes the techniques used to manage the vegetative part of the plant through various types of pruning (summer and winter), defoliation, shoot trimming, and post-veraison trimming. All these techniques play a fundamental role in the fruit's response to stressful situations. The use of biostimulants as compounds to improve tolerance to abiotic stress is also discussed. This group of compounds includes kaolin and yeast extracts.
L’incremento della presenza dei gas serra nell’atmosfera ha causato l’aumento delle temperature, la variazione delle stagioni vegetative, la riduzione della biodiversità e la maggior frequenza della manifestazione di fenomeni estremi, quali siccità, alluvioni e ondate di calore. Il cambiamento climatico rappresenta una sfida per l’agricoltura e, nello specifico, per la viticoltura. Questa tesi si focalizza sulla descrizione delle variazioni delle caratteristiche qualitative del frutto della vite, ossia il grappolo, e come vengono influenzate dai fattori abiotici presenti nell’ambiente in cui è situata la pianta e le tecniche che si possono utilizzare per contrastarli. Nell’introduzione viene descritta la pianta della vite e le sue caratteristiche. Nel primo capitolo vengono descritti cosa sono i fattori abiotici e quali sono i fattori che incidono sulla qualità dell’uva, ovvero CO2, temperatura, disponibilità idrica e radiazioni solari. Il secondo capitolo descriverà il cambiamento climatico nell’areale italiano e mondiale e gli effetti di tale fenomeno sulla composizione chimica e organolettica degli acini andando ad approfondire ogni singolo fattore da un punto di vista scientifico. Nel terzo capitolo vengono trattate le conseguenze dello stress idrico, come l’aumento della salinità del suolo, e i danni che esso porta alla qualità dei frutti; si descrive anche l’utilizzo della tecnica del deficit idrico controllato e i vantaggi che porta alle caratteristiche qualitative degli acini. Nel quarto capitolo viene descritta la risposta ormonale della vite in seguito allo stress rilevato dalla pianta; tra gli ormoni regolatori il più rilevante è rappresentato dall’acido abscissico (ABA). Nel quinto capitolo infine sono descritte le tecniche utilizzate per la gestione della parte vegetativa della pianta tramite i vari tipi di potatura (estiva e invernale), la defogliazione, la cimatura dei germogli e la cimatura post-invaiatura. Tutte le tecniche hanno un ruolo fondamentale nella risposta del frutto a situazioni di stress. Viene trattato anche l’uso di biostimolanti come composti per migliorare la tolleranza agli stress abiotici. A questo gruppo di composti appartengono il caolino e gli estratti di lievito.
