The increasing diffusion of chemical elements and environmental contaminants in natural matrices and food chains represents a growing concern for public health, food safety, and ecosystem protection. This thesis aims to assess the levels of heavy metals, with particular reference to lead (Pb) and cadmium (Cd), and, in an innovative manner, rare earth elements (REEs), in biological samples from wild boar (Sus scrofa) collected from specific local contexts. Specifically, analyses were performed on liver, renal fat capsule, muscle, and hair, in order to compare and correlate the different distribution and bioaccumulation patterns of the analyzed elements in different biological matrices. This approach allows for a deeper understanding of tissue accumulation dynamics and to assess the potential use of different matrices as indicators of environmental exposure. Furthermore, for heavy metal concentrations detected in muscle and liver, considered edible matrices, the results were compared, where applicable, with the maximum limits established by current European legislation. A risk analysis was also conducted to assess potential consumer exposure.
La crescente diffusione di elementi chimici e contaminanti ambientali nelle matrici naturali e nelle catene alimentari rappresenta una problematica di crescente interesse per la sanità pubblica, la sicurezza alimentare e la tutela degli ecosistemi. Il presente lavoro di tesi ha lo scopo di valutare i livelli di metalli pesanti, con particolare riferimento a piombo (Pb) e cadmio (Cd), e, in maniera innovativa, di elementi delle terre rare (REEs, Rare Earth Elements), in campioni biologici di cinghiale (Sus scrofa) provenienti da specifici contesti territoriali. Nello specifico, le analisi sono state effettuate su fegato, capsula adiposa renale, muscolo e pelo, al fine di confrontare e correlare i differenti pattern di distribuzione e bioaccumulo degli elementi analizzati nelle diverse matrici biologiche. Tale approccio consente di approfondire la dinamica di accumulo tissutale e di valutare il potenziale impiego delle differenti matrici come indicatori di esposizione ambientale. Inoltre, per le concentrazioni di metalli pesanti rilevate nel muscolo e nel fegato, considerati matrici edibili, i risultati sono stati confrontati, ove applicabili, con i limiti massimi stabiliti dalla normativa europea vigente; è stata inoltre condotta un’analisi del rischio finalizzata alla valutazione della potenziale esposizione del consumatore.
