The growing importance of intensive farming in animal protein production has led to the need to place the welfare of farm animals at the center of scientific, ethical and public debate. Over the years, both scientific research and the cultural context of different countries have contributed to significant changes in the understanding of animal welfare, which has evolved from a static concept, defined merely as the absence of negative states, to a multifactorial and dynamic condition shaped by the continuous interactions between the individual and the surrounding environment. Environmental stimuli and factors elicit physiological and behavioral responses in animals that form the basis for determining their welfare status. Assessing animal welfare therefore requires the use of multiple parameters, with particular emphasis on the direct observation of the individual’s conditions. The intensive farming of broiler chickens represents a significant example of the ethical issues associated with modern production systems, where scientific and technological advances aimed at increasing production efficiency often conflict with the actual welfare status of the animals.
La crescente rilevanza degli allevamenti intensivi nella produzione di proteine di origine animale ha condotto alla necessità di porre il tema del benessere degli animali da reddito come argomento centrale nel dibattito scientifico, etico e pubblico. Nel corso degli anni, ricerca e contesto culturale dei diversi Paesi hanno contribuito a notevoli cambiamenti nella considerazione del benessere animale, evolutosi da una visione statica, intesa come mera assenza di stati negativi, ad una concezione multifattoriale e dinamica, determinata dalle continue interazioni tra il singolo individuo e l’ambiente circostante. Stimoli e fattori ambientali inducono nell’animale risposte fisiologiche e comportamentali alla base della determinazione del suo stato di benessere, la cui valutazione richiede l’utilizzo di molteplici parametri, con enfasi particolare sull’osservazione diretta delle condizioni dell’individuo. L’allevamento intensivo dei polli da carne broiler rappresenta un esempio significativo delle problematiche etiche riscontrabili nei sistemi di produzione moderni, nei quali i progressi scientifici e tecnologici volti all’incremento dell’efficienza produttiva si scontrano con l’effettivo stato di benessere degli animali.
