This thesis is based on work carried out during an internship at the Economic Observatory, one of the departments of Veneto Agricoltura (Veneto Agency for Innovation in the Primary Sector). The paper begins by examining the dynamics of niche markets as opposed to mass markets; this analysis serves as an introduction to the study of the turkey sector, understood as a specific subcategory within the broader poultry sector. Although this sector does not reach the production volumes of more popular livestock, it represents a fundamental pillar of the regional agricultural economy, with Veneto accounting for over half of the farms and livestock nationwide. To study the current state of the supply chain, data from two different sources were integrated: consultation of official national statistical websites and the distribution of questionnaires to industry operators. Once obtained, the collected data was analyzed and processed using mathematical formulas based on the established objectives. The aim was to obtain actual numerical data on the performance of the turkey sector, as well as insights into the current perception and future prospects of the sector derived directly from those working within it.
Il presente lavoro di tesi deriva dal lavoro svolto in tirocinio presso l'Osservatorio Economico, uno degli uffici di Veneto Agricoltura (Agenzia Veneta per l'Innovazione nel Settore Primario). L’elaborato esamina preliminarmente le dinamiche dei mercati di nicchia in contrapposizione ai mercati di massa; tale analisi serve a introdurre lo studio del comparto dei tacchini, inteso come sottocategoria specifica all'interno della macrocategoria del settore avicolo. Questo settore, nonostante non raggiunga i volumi delle produzioni di animali più prediletti, rappresenta un pilastro fondamentale per l'economia agricola regionale, con il Veneto che concentra oltre la metà degli allevamenti e dei capi a livello nazionale. Per studiare lo stato attuale della filiera si sono integrati dati derivati da due diverse analisi: la consultazione di siti di statistica ufficiali nazionali e la diffusione di questionari per gli operatori del settore. Una volta ottenuti c'è stato lo studio e l'elaborazione dei dati raccolti attraverso formule matematiche in base agli obiettivi imposti. Il fine di ciò è stato quello di ottenere dati reali a livello numerico sull'andamento del settore dei tacchini, ma anche dati riguardo la percezione attuale e prospettive future del comparto derivate direttamente da chi opera al suo interno.
