Do we all really use our five senses every day? And most importantly, do we use them correctly? Every day, when we interact with food (and not only) we get involuntarily conditioned by our perceptions: observing the appearance of a food, touching it with our hands, tasting it, smelling it, or listening to it. For example, if we eat chips without their crunchiness, we think that they are "not good" to taste because they no longer have the characteristic that distinguishes them, or if a banana’s skin has turned completely brown, we tend to throw it away because it no longer has an inviting appearance and therefore, we do not eat it. These are some situations where we use our senses to evaluate the food and decide the quality of it based on our own experiences. Indeed, we humans could be considered scientific machines, and our instruments, namely our senses, are accessible to everyone: we only need to practice how to use them at their full potential. Sometimes, those who are not experts, like consumers, analyse what they encounter with a few descriptors such as "good", "bad", "nice", "smells bad" etcetera, but without really considering or deepening they knowledge of the product in front of them. This happens because only few people are prepared to analyse the food as a whole and study it through the lens of sensory analysis. Sensory analysis is a scientific subject, and it is applicated to analyse the organoleptic aspects of a product, either food or products of different nature. In the food world it is very important to use sensory analysis because it allows us to make a considerable variety of operations, among which: define the sensory profile of a product, validate the shelf life, elaborating the formulation of a new product or modify an existing one. In this thesis the attention is focused on the sensory analysis of cheese, which is first described from an objective point of view, explaining its function, the role of senses and their use in cheese production. Subsequently, the focus shifts on the analysis of data that has been collected through a sensory analysis experience; thanks to this collection of data, it was possible to understand the choices of consumers and their approach to this product. In addition, this has allowed for the creation of sensory maps of cheeses, graphic schemes that represent the dairy product from a sensory point of view through the eyes of the judge (namely, the consumer).  

I famosi cinque sensi li usiamo davvero tutti i giorni? E soprattutto sappiamo usarli correttamente? Ogni giorno quando ci relazioniamo con il cibo (e non solo) ci facciamo condizionare, talvolta involontariamente, dalle nostre percezioni osservando l’aspetto di un alimento, toccandolo con le mani, assaggiandolo, annusandolo o ascoltando il rumore che può fare. Ad esempio, se assaggiamo delle patatine che hanno perso la loro fragranza pensiamo subito che non sono più “tanto buone” perché non hanno più la caratteristica che le contraddistingue oppure se una banana ha la buccia completamente marrone, tendenzialmente, la buttiamo via perché non ha più un aspetto invitate e quindi non la mangiamo. Queste sono alcune delle tante situazioni dove usiamo in nostri sensi per valutare un cibo e decidere la qualità di quest’ultimo sulla base delle nostre esperienze. In effetti, noi umani, potremmo essere considerati come una vera e propria macchina di analisi della realtà e gli strumenti, cioè i sensi, che abbiamo sono accessibili a tutti, basta solo fare pratica per poterli applicare al meglio. Talvolta chi non è esperto, come potrebbe essere il consumatore, analizza ciò che ha di fronte con pochissimi descrittori “è bello”, “è brutto”, “è buono”, “ha un cattivo odore” e via dicendo senza, però, considerare realmente o approfondire l’alimento che ha davanti. Questo accadde perché poche persone sono abituate ad analizzare il prodotto nel suo insieme e sono coloro che studiano gli alimenti attraverso l’analisi sensoriale. Questa materia è una scienza a tutti gli effetti e viene applicata per analizzare gli attributi organolettici di un prodotto di qualsiasi natura, non solo quella alimentare. Nel mondo alimentare è molto importante utilizzare l’analisi sensoriale perché ci permette di definire un profilo sensoriale di un prodotto, validare la shelf life, applicarla per la formulazione di un nuovo prodotto o modifica di uno già esistente e altri utilizzi ancora. In questa tesi si approfondisce come tema l’analisi sensoriale del formaggio prima descrivendola con un carattere più oggettivo dove si spiega la sua funzione, quella dei sensi e anche la sua declinazione nel mondo dei formaggi; solo in un secondo momento l’attenzione si sposta sull’osservazione dei dati emersi dall’analisi sensoriale che è stata effettuata dal consumatore, a casa propria. Grazie a questa raccolta di dati si sono potute comprendere le scelte del consumatore e il suo approccio con questo prodotto alimentare. Inoltre, ciò ha permesso la realizzazione di mappe sensoriali dei formaggi ovvero degli schemi grafici che rappresentano il prodotto caseario da un punto di vista sensoriale attraverso gli occhi del giudice (nel nostro caso il consumatore).
