Given the continuous growth of the world population, there is a need to considerably reduce food waste by the consumer, but at most it is essential to reduce food losses in the previous stages of the supply chain when the product has not yet reached the retail trade. Food losses are caused by processes of incorrect food management in the production, post-harvest, distribution and storage phases.In this dissertation will address the economic, environmental and food safety issues caused by food losses, with regard to possible containment strategies and practices, to limit the damage caused by them, promoting intelligent food logistics.
Vista la continua crescita della popolazione mondiale, vi è la necessità di ridurre in maniera considerevole gli sprechi alimentari da parte del consumatore, ma risulta fondamentale, inoltre, ridurre le perdite alimentari nelle fasi precedenti della filiera quando il prodotto non è ancora arrivato al commercio al dettaglio. Le perdite alimentari sono causate da processi di scorretta gestione degli alimenti nelle fasi di produzione, post-raccolta, distribuzione e conservazione. Nell’elaborato verranno affrontate: le problematiche economiche, ambientali e di sicurezza alimentare causate dalle perdite alimentari, con riguardo alle possibili strategie e pratiche di contenimento, per limitare i danni che esse provocano, promuovendo una logistica alimentare intelligente.
