The production of food has significant environmental consequences and the need for more sustainable consumption patterns has been widely acknowledged. However, despite economic incentives, laws, education, and communication campaigns, consumers often find it challenging to change their food habits. This thesis takes a behavioral approach in encouraging sustainable food choices among consumers. By adapting the food environment, nudging interventions can encourage non-obtrusive behavioral changes that do not restrict consumers' choices but adapt the choice architecture in which food decisions are made. This literature review provides an overview of the application of nudging for sustainable food choices and highlights areas for future research. The review focuses on research that used nudging to encourage cognitive, affective, and behavioral effects. The study concludes that although there is still much to be explored in the field of nudging and sustainable consumption, personal predispositions towards the environment should be considered when designing interventions. Furthermore, the review demonstrates that nudging can complement education on sustainable consumption.
