My thesis opens with the exposition of the basics related to the tourist phenomenon, Destination Management and Destination Marketing, and then focus on the conditions related to the tourist phenomenon in the Veneto region. A second part of the elaborated section deals in particular with literary tourism, food and wine tourism and related itineraries in Veneto, with a focus on the journey made by Guido Piovene and reported by himself in the work "Viaggio in Italia". The thesis proposes to retrace his itinerary to rediscover the value of traditional cuisine and historic trattorias in the Veneto region: home cooking venues, as well as a fundamental part of the identity of each provincial community. The thesis ends with some strategic proposals to encourage and develop a proposal for a literary-gastronomic itinerary in the footsteps of Piovene, taking into account the approach of Destination Management.
La mia tesi si apre con l'esposizione delle nozioni di base relative al fenomeno turistico, al Destination Management e al Destination Marketing, per poi focalizzarsi sulle condizioni relative al fenomeno turistico territorio veneto. Una seconda parte dell'elaborato tratta in particolare del turismo letterario, quello enogastronomico e dei relativi itinerari in Veneto, con un focus sul percorso compiuto da Guido Piovene e riportato da lui stesso nell'opera "Viaggio in Italia". La tesi propone di ripercorrere il suo itinerario per riscoprire il valore della cucina tradizionale e delle trattorie storiche nel Veneto: sedi della cucina casalinga, nonché di una parte fondamentale dell'identità di ogni comunità provinciale. La tesi si conclude con alcune proposte strategiche per incentivare e sviluppare una proposta di itinerario letterario-gastronomico sulle orme di Piovene, tenendo in considerazione l'approccio del Destination Management.
