With the impact of crop raising on the environment, the need to find more sustainable methods of producing enough foodstuff to feed the constant population growth has emerged. Insect-based foods are a novel food that has been trying to make its way into the market as an environmentally friendly protein source alternative. This thesis aims to analyze how Italian consumers view the introduction of this novel food into their diet, and how psychological biases can affect their perspectives.
