This thesis explores the role of extra virgin olive oil in the human diet, with particular emphasis on its health-promoting properties. The first section examines the olive fruit, including cultivation techniques and the main methods of oil extraction and refining. The discussion then focuses on the chemical composition of extra virgin olive oil and reviews scientific studies highlighting its potential in preventing various diseases, including metabolic disorders, neurodegenerative conditions, and cancers. Due to its high content of bioactive compounds, extra virgin olive oil stands out for its ability to counteract oxidative and inflammatory processes, confirming its status as a key and functional component of the Mediterranean diet.
La presente tesi esplora il ruolo dell'olio extravergine d'oliva nella dieta, con particolare attenzione ai suoi effetti benefici sulla salute umana. Nella prima parte viene analizzato il frutto dell’olivo, includendo le tecniche di coltivazione e i principali metodi di estrazione e raffinazione dell’olio. La trattazione si concentra poi sulla composizione chimica del prodotto e sui risultati delle ricerche scientifiche che ne evidenziano il potenziale nella prevenzione di diverse patologie, tra cui malattie metaboliche, neurodegenerative e forme tumorali. Grazie all’elevato contenuto di composti bioattivi, l’olio extravergine d’oliva si distingue per la sua capacità di contrastare i processi ossidativi e infiammatori, confermandosi come elemento cardine e funzionale della dieta mediterranea.
