This thesis aims to examine current scientific knowledge on lycopene, a red carotenoid found in numerous fruits and vegetables, particularly tomatoes. The analysis is based on a review of the scientific literature and reliable sources, with a particular focus on lycopene's antioxidant properties and its potential beneficial effects on human health. The thesis delves into the compound's biochemical characteristics, its bioavailability in relation to food preparation and cooking methods, and its metabolism in the human body. Particular emphasis is placed on lycopene's preventive role in chronic diseases, such as cardiovascular disease, certain type of cancers, osteoporosis, and neurodegenerative disorders. The review findings highlight that a lycopene-rich diet, when combined with a healthy lifestyle, can significantly contribute to the prevention of pathological conditions related to oxidative stress.
La presente tesi si propone di esaminare le attuali conoscenze scientifiche sul licopene, un carotenoide di colore rosso presente in numerosi frutti e ortaggi, in particolare nel pomodoro. L’analisi si basa su una revisione della letteratura scientifica e di fonti attendibili, con particolare attenzione alle proprietà antiossidanti del licopene e ai suoi potenziali effetti benefici sulla salute umana. L’elaborato approfondisce le caratteristiche biochimiche del composto, la biodisponibilità in relazione ai metodi di preparazione e cottura degli alimenti, nonché il suo metabolismo nell’organismo umano. Particolare rilevanza è stata data al ruolo preventivo del licopene in relazione a patologie croniche, come malattie cardiovascolari, alcuni tipi di cancro, osteoporosi e disturbi neurodegenerativi. I risultati della revisione evidenziano che una dieta ricca di licopene, se associata a uno stile di vita sano, può contribuire in modo significativo alla prevenzione di condizioni patologiche legate allo stress ossidativo.
