Pig farming is an important sector for Italian livestock farming, particularly important for the production of heavy pigs destined for cured hams with the Protected Designation of Origin (PDO) label. Over time, farming techniques have evolved according to: genetic, structural, and nutritional profiles; distinguishing closed-cycle from open-cycle farming and differentiating the production of light pigs (for fresh consumption) from that of heavy pigs (for processing into seasonal cured meats).
L9allevamento suinicolo rappresenta un settore importante per la zootecnia italiana, con un rilievo interessante per la produzione del suino pesante destinato ai prosciutti crudi a marchio Denominazione di Origine Protetta (DOP). Nel tempo le tecniche di allevamento si sono evolute seguendo: il profilo genetico, strutturale e alimentare; distinguendo la tipologia di allevamento a ciclo chiuso da quello a ciclo aperto e differenziando la produzione di suini leggeri (per il consumo fresco) e quella di suini pesanti (per la trasformazione in salumi stagionali)
