Georgia is often regarded as the cradle of wine, with a winemaking tradition that dates back over eight millennia. This thesis explores the historical development of Georgian wine, from the earliest archaeological evidence to the current dynamics of the sector. It examines the evolution of winemaking techniques, with a particular focus on the qvevri — the ancient clay vessel that still defines traditional Georgian wine production. The study also considers the major socio-political transformations, from Soviet rule to post-independence revival that have influenced production methods and the global positioning of Georgian wine. Special attention is given to the deep connection between wine and cultural identity, highlighting how viticulture has become both a source of national pride and a tool for cultural diplomacy. Finally, the thesis reflects on the current challenges facing the industry, caught between the preservation of tradition and the need for innovation in an ever-changing global market.
La Georgia è considerata una delle culle della viticoltura mondiale, con una tradizione vinicola che risale a oltre 8.000 anni fa. Questa tesi analizza il percorso evolutivo del vino georgiano, partendo dalle prime testimonianze archeologiche fino alle dinamiche attuali del settore. Viene esaminata l’evoluzione delle tecniche di vinificazione, con particolare attenzione all’uso del Qvevri, l’antico recipiente in terracotta che ancora oggi caratterizza la produzione tradizionale. L'elaborato prende in considerazione i profondi cambiamenti socio-politici, dalla dominazione sovietica alla rinascita post-indipendenza, che hanno influito sulla produzione e sul posizionamento del vino georgiano a livello internazionale. La ricerca mette in luce il forte legame tra vino e identità culturale, evidenziando come la viticoltura sia diventata un simbolo di orgoglio nazionale e uno strumento di promozione culturale nel mondo. In conclusione, la tesi propone una riflessione sulle sfide contemporanee del settore, tra valorizzazione della tradizione e necessità di innovazione in un mercato globale in continua evoluzione
