The poultry sector is constantly growing and requires the adoption of strategies capable of ensuring high levels of production efficiency, environmental sustainability and animal welfare. In this context, the research of alternative protein sources to soya represents one of the main challenges facing the livestock sector. This experimental thesis evaluated the inclusion of protein sources such as field beans, lupins and sunflower seeds, analysing their effects on production performance and the quality of the final product in broiler chickens. The trial was conducted at the experimental animal facility of the University of Padua. 624 male ‘Ross 308’ broiler chickens were divided into four experimental groups fed either a conventional control diet or diets containing 10% field bean, lupin and sunflower meal. Production performance and the animals’ health status were assessed from hatching to slaughter at 36 days of age. Following slaughter at a commercial facility, 144 carcasses were collected for the assessment of slaughter yields and the rheological characteristics of the meat at the DAFNAE department of the University of Padua.
Il settore avicolo è in costante crescita e richiede l’adozione di strategie in grado di garantire elevati livelli di efficienza produttiva, sostenibilità ambientale e benessere animale. In questo contesto, la ricerca di fonti proteiche alternative alla soia rappresenta una delle principali sfide del settore zootecnico. La presente tesi sperimentale ha valutato l’inclusione di fonti proteiche quali favino, lupino e girasole, analizzandone gli effetti sulle prestazioni produttive e sulla qualità del prodotto finale in polli da carne. La prova è stata condotta presso lo stabulario sperimentale dell’Università degli Studi di Padova, 624 polli broiler maschi “Ross 308” sono stati suddivisi in quattro gruppi sperimentali alimentati con una dieta controllo di tipo convenzionale o con diete contenenti il 10% di farine di favino, lupino e girasole. Sono state valutate le prestazioni produttive e lo stato di salute degli animali dalla schiusa alla macellazione a 36 giorni di età. Dopo la macellazione presso uno stabilimento commerciale, 144 carcasse sono state prelevate per la valutazione delle rese di macellazione e caratteristiche reologiche della carne presso il dipartimento DAFNAE dell’Università degli studi di Padova.
