In the last few years, the lactose-free products’ market has reported a significant worldwide growth. Its value was estimated at 14.7 billion in 2026, with distribution in over 100 countries and prospects for further expansion. This growth is primarily driven by the increasing prevalence of lactose intolerance and greater consumer focus on health. The aim of this thesis was to investigate consumption habits and behaviors, cases of lactose intolerance, and consumers’ knowledge about lactose and lactose-free products, according to the sociodemographic characteristics of respondents from Italy and Brazil. To this end, a survey was conducted and administered digitally through Google Forms to Italian and Brazilian consumers. The survey, entitled “Perception and Knowledge of Lactose and Lactose-Free Products: An International Survey between Italy and Brazil”, consisted of 22 questions divided into three sections: (A) sociodemographic information, (B) eating habits and consumption behaviours, and (C) lactose intolerance and knowledge. The sources of variation in the responses were analysed using a regression model including country of origin, gender, age group, and educational level as fixed effects. A total of 1,099 responses were collected (644 from Italy and 455 from Brazil). Among all the effects tested, country of origin was found to be the most significant. Regarding gender, significant differences emerged between women’s and men’s responses, particularly in consumption habits and perceptions of milk healthiness. Age group was significant in relation to consumers’ habits, knowledge, and perceptions. In contrast, educational level was the least significant effect. A large proportion of respondents were unaware of the natural absence of lactose in aged cheeses. Furthermore, it emerged that providing an explanation of how lactose-free milk is produced may improve its reputation and potentially encourage its consumption. The results of this thesis suggest the potential usefulness of clearer labelling regarding the absence of lactose in aged cheeses and the technologies used to produce lactose-free milk.
Negli ultimi anni, il mercato dei prodotti senza lattosio ha registrato una crescita significativa a livello globale. Il valore è stato stimato in 14.7 miliari di dollari nel 2026, con una diffusione in oltre 100 Paesi e prospettive di ulteriore espansione. Questa crescita è principalmente trainata dall’aumento della prevalenza dell’intolleranza al lattosio e da una maggiore attenzione dei consumatori verso la salute. L’obiettivo dell’elaborato consiste nell’indagare le abitudini e i comportamenti di consumo, i casi di intolleranza al lattosio, la conoscenza dei consumatori circa il lattosio e i prodotti delattosati, in funzione delle informazioni sociodemografiche degli intervistati provenienti da Italia e Brasile. A tal fine è stata condotta un’indagine, somministrata in formato digitale tramite Google Moduli, tra i consumatori italiani e brasiliani. La survey, intitolata “Percezione e conoscenza del lattosio e dei prodotti delattosati: un’indagine internazionale tra Italia e Brasile”, era composta da 22 domande suddivise in 3 sezioni: (A) informazioni sociodemografiche, (B) abitudini alimentari e comportamenti di consumo, e (C) intolleranza al lattosio e conoscenze. Le fonti di variazione delle risposte sono state analizzate mediante un modello di regressione che includeva il paese di origine, il genere, la classe d’età e il titolo di studio come effetti fissi. Le risposte raccolte sono state 1099 (644 provenienti dall’Italia e 455 dal Brasile). Tra tutti gli effetti testati il paese di origine è risultato essere il più significativo. Per quanto riguarda il genere si riscontrano differenze significative nelle risposte date da donne e uomini, soprattutto nei consumi e nella percezione della salubrità del latte. La classe d’età è risultata significativa per le abitudini di, le conoscenze e le percezioni dei consumatori. Al contrario, il titolo di studio è risultato essere l’effetto meno significativo. Buona parte degli intervistati dimostra di non essere a conoscenza della naturale assenza di lattosio nei formaggi stagionati. È emerso inoltre, che fornire una spiegazione sull’ottenimento del latte delattosato può migliorarne la reputazione e probabilmente favorirne così i consumi. I risultati del presente lavoro di tesi suggeriscono la possibile utilità di un’indicazione più chiara in etichetta circa l’assenza del lattosio nei formaggi stagionati e circa le tecnologie utilizzate per ottenere il latte delattosato.
