In recent years, a growing interest in new forms of culinary fusion has emerged in the global gastronomic landscape. Fusion food is a phenomenon linked to the opening of dialogue among cultures, techniques, and ingredients from around the world, emphasizing encounters between cuisines from different ethnic groups. This new trend in fusion food, reflected primarily in shifts in consumer tastes and openness to experimentation, involves many social, cultural, and economic dynamics that influence how food is viewed and appreciated. The aim of this thesis is to analyze fusion food from a theoretical and applied perspective, delving into its role in the contemporary gastronomic landscape, with historical and social references. Specifically, the paper analyzes the ethnic restaurant market in Italy and a potential dialogue between Italian and Nigerian cuisine, two realities I have experienced since I was born, two culinary traditions that, at first glance, are distant from each other in terms of techniques, ingredients, and cultural symbols, but both rich in identity and deeply connected to the history of their respective countries. A key part of the research is consumer analysis, conducted through a questionnaire to assess their interest in ethnic cuisines and new flavors, as well as their potential acceptance of an Italian Nigerian fusion offering. The survey allows us to identify potential customer profiles, outline their needs and expectations, and assess the feasibility of a restaurant concept based on this gastronomic combination. Based on the information gathered, the work continues with the design of an Italian Nigerian restaurant concept in Verona that integrates planning, cultural, gastronomic, and value-based elements, with particular attention to sustainability, customer experience, and the format's consistent identity. The thesis concludes with a reflection on the restaurant's potential positioning and communication strategies, considering current market trends and the results of the analysis conducted. With this study, I would therefore like to provide a comprehensive and up-to-date overview of fusion food and demonstrate how the fusion of seemingly distant cultures, flavors, and histories can transform not only into a unique gastronomic offering but also into a restaurant project capable of conferring cultural, social, and experiential value to this encounter.
Negli ultimi anni, nel contesto gastronomico globale, è emerso un forte interesse per nuove forme di contaminazione culinaria. Il fusion food è un fenomeno legato all’apertura di un dialogo tra culture, tecniche e ingredienti di vari paesi del mondo, che sottolinea l'incontro tra cucine di diverse etnie. Questa nuova tendenza del cibo fusion, si riflette in primo luogo sui cambiamenti nel gusto del consumatore, interessato e aperto alla sperimentazione, e riguarda molte dinamiche sociali, culturali ed economiche che influenzano il modo in cui il cibo viene visto e colto. L’obiettivo di questo lavoro è analizzare il fusion food da una prospettiva teorica e applicativa, approfondendo, con accenni storici e sociali, il ruolo che esso svolge nel panorama gastronomico contemporaneo. In particolare, l’elaborato analizza il mercato della ristorazione etnica in Italia e un potenziale dialogo tra la cucina italiana e quella nigeriana, due realtà che ho vissuto fin da quando sono nata. Queste due tradizioni culinarie, a un primo sguardo, sembrano lontane tra loro per tecniche, ingredienti e simboli culturali, ma in realtà si rivelano entrambe ricche di identità e profondamente legate alla storia dei rispettivi paesi. Una parte centrale della ricerca è dedicata all’analisi dei consumatori, condotta tramite un questionario volto a comprendere l’interesse per le cucine etniche, i nuovi sapori e la possibile accoglienza di una proposta fusion italo-nigeriana. L’indagine consente di individuare il profilo dei potenziali clienti, delineare i bisogni e le aspettative e valutare la fattibilità di un concept di ristorazione basato su questo incontro gastronomico. Partendo dalle informazioni raccolte, il lavoro prosegue con l’elaborazione di un concept per un ristorante italo-nigeriano nel centro di Verona che integri aspetti progettuali, culturali, gastronomici ed esperienziali, con particolare attenzione alla sostenibilità, alla customer experience e alla coerenza identitaria del format. L’elaborato si conclude con una riflessione sulle potenziali strategie di posizionamento e di comunicazione del ristorante, in riferimento alle attuali tendenze di mercato e ai risultati dell’analisi condotta. Con il presente studio vorrei quindi fornire una visione completa e aggiornata del fusion food e mostrare come la fusione di culture, sapori e storie apparentemente lontani, possa trasformarsi non solo in un’offerta gastronomica unica, ma anche in un progetto ristorativo in grado di conferire valore culturale, sociale ed esperienziale a tale incontro.
