Packaging design is not merely a tool for commercial communication and brand identity building, but can also play a relevant social role by actively orienting consumers’ choices toward healthier food options. Through design, it is possible to assign greater importance to certain elements over others, making them visually dominant and more strongly emphasized. In this way, packaging can direct consumers’ attention not only to the product itself, but also to information and cues that encourage more informed decisions, potentially contributing to a reduction in the consumption of discretionary and ultra-processed foods. Food choices arise from the interaction between automatic and rational cognitive processes, both of which are strongly influenced by the visual stimuli present on the package. In this context, packaging can be considered a clear example of a nudge, capable of guiding behavior even in the absence of fully conscious processing. However, the literature on consumer behavior shows that regulated claims, nutritional information, and front-of-pack labels currently in use are not always designed to maximize their effectiveness in promoting healthy choices. Therefore, further research in this area is needed, with the aim of optimizing food packaging by paying particular attention to visual communication design. To this end, three scientific articles have been analyzed in depth, examining: (i) the impact of front-of-pack marketing attributes versus nutrition and health information on parents' food choices; (ii) the use of graphic design to communicate consumer benefits on food packaging; (iii) the role of positioning of design elements on the packaging to convey consumers attention.
Il design del packaging non rappresenta soltanto uno strumento di comunicazione commerciale e di costruzione dell’identità di marca, ma può svolgere anche una funzione sociale rilevante, orientando attivamente le scelte del consumatore verso opzioni alimentari più salutari. Attraverso il design è infatti possibile attribuire maggiore importanza ad alcuni elementi rispetto ad altri, rendendoli visivamente dominanti e maggiormente enfatizzati. In questo modo, il packaging può indirizzare l’attenzione del consumatore non solo verso il prodotto, ma anche verso informazioni e segnali che favoriscono decisioni più consapevoli, contribuendo potenzialmente alla riduzione del consumo di alimenti discrezionali e ultra-processati (Chu et al., 2021). Le decisioni alimentari derivano dall’interazione tra processi cognitivi automatici e razionali, entrambi influenzati dagli stimoli visivi presenti sulla confezione. In particolare, poiché il packaging agisce prevalentemente sui processi automatici e non razionali della decisione, attraverso l’uso di elementi visivi immediati come colori, simboli e immagini, può essere considerato un chiaro esempio di nudge (Thaler & Sunstein, 2021), capace di orientare il comportamento del consumatore senza richiedere un’elaborazione cognitiva totalmente consapevole. Tuttavia, la letteratura sul tema evidenzia come alcuni degli strumenti di comunicazione attualmente integrati nel packaging alimentare per guidare le scelte dei consumatori, come le indicazioni nutrizionali e le etichette nutrizionali fronte-pacco, non sono sempre progettate in modo da massimizzare la loro efficacia nel promuovere scelte salutari. Perciò, risulta necessario approfondire ulteriormente la ricerca in questo ambito, con l’obiettivo di ottimizzare il packaging alimentare, ponendo particolare attenzione al design della comunicazione visiva. A tal fine, sono stati analizzati tre articoli scientifici che affrontano la tematica in modo approfondito, misurando: (i) quale sia l’impatto degli attributi presenti sulla parte anteriore della confezione sulle scelte di acquisto dei genitori per i propri figli; (ii) quale sia la progettazione grafica più efficace per comunicare i benefici per il consumatore sulle confezioni alimentari; (iii) quale sia il posizionamento migliore degli elementi di design sulla confezione di alimenti surgelati pronti per catalizzare l’attenzione dei consumatori.
