This thesis analyzes the mechanisms of smell and taste and their role in gastronomic harmony, with particular attention to the tasting of Venetian grappa, gin, and Prosecco, as well as their pairings with typical products from the Padua area. The work integrates scientific aspects—such as the central role of olfaction, responsible for about 80% of perceived flavor, and its interaction with taste and trigeminal components—with the local territorial context and practical experience gained during an internship at the Bonollo Distilleries. It proposes pairings based on rational sensory criteria—contrast, complementarity, and structural balance—illustrated through concrete examples from Venetian tradition, such as pairing grappa with fatty dishes, Prosecco with creamy or spring dishes, and gin with cured meats. These choices are rooted in local gastronomic culture while also embracing contemporary innovations, such as the use of artisanal gin. The main objectives are: to describe the functioning of smell and taste (including the six basic tastes), to analyze tasting techniques for the selected beverages, and to define logical criteria for food and beverage pairings. The approach is theoretical-descriptive, based on scientific literature and territorial case studies. The thesis is structured into five chapters, moving from sensory theory to practical applications and finally to the cultural value of tasting. Overall, it demonstrates how smell and taste can serve as scientific tools to enhance local gastronomic heritage and strengthen the social role of conviviality.

Abstract
Overall, it demonstrates how smell and taste can serve as scientific tools to enhance local gastronomic heritage and strengthen the social role of conviviality.| File | Dimensione | Formato | |
