The transition towards sustainable development models currently represents one of the most significant challenges for the agri-food sector. In this context, modern viticulture faces a dual objective: reducing the use of plant protection products in the vineyard and, at the same time, managing the massive biomass derived from viticultural and enological production processes through a circular economy approach. A concrete answer to this need lies in the integration of genetic innovation and the valorization of by-products. On one hand, the adoption of varieties resistant to downy and powdery mildew enables "upstream" sustainability, translating into environmental benefits (healthier soil and water resources), economic advantages (lower management costs), and social gains, thanks to the reduction of chemical treatments near residential areas. On the other hand, process biomasses offer an opportunity for "downstream" sustainability, serving as a valuable source of high value-added bioactive compounds. The aim of this thesis is to characterize the stilbene content in the pruning residues of 52 resistant grapevine genotypes developed within the breeding program of the CREA – Research Centre for Viticulture and Enology in Conegliano. The samples were subjected to phenolic compound extraction and subsequently analyzed by high-performance liquid chromatography (HPLC) in order to identify and quantify the main stilbenes, such as resveratrol, piceatannol, and viniferin, and to compare their content across the different genotypes. The results of this research aim to demonstrate how the recovery of stilbenes from pruning canes can close the production loop, promoting circular economy strategies and increasing both the environmental and economic sustainability of the wine supply chain.

Abstract
The results of this research aim to demonstrate how the recovery of stilbenes from pruning canes can close the production loop, promoting circular economy strategies and increasing both the environmental and economic sustainability of the wine supply chain.| File | Dimensione | Formato | |
