In a world where globalization has become a common factor in economy, Italy also plays an important role in international trade. Despite the crisis, Italian agri-food exports have grown by 11% in the last year, as compared to 2020. For food exporting companies, it is important always to keep up with the regulations in Europe and other countries of the world, to ensure that the food product complies with all the requirements set by the regulations of the importing countries. However, this considerable number of Regulations and their updates can be an obstacle for some, especially small-medium sized, companies. This thesis work was designed and created to simplify through an application (Foodoc) the management of both the nutritional and general information to be reported on the label. Starting from the legislation, in this case from the Canadian Food and Drugs Regulations, a decision tree has been created that comprises: - the "exceptions" (special/exceptional cases), i.e., the types of foods that should carry a special nutrition facts table; - foods "excluded" from the obligation to report the table; - the "formats", based on shapes and dimensions of the packaging, that are useful parameters in defining which type of table is needed. The decision tree allows an understanding of the most suitable type of nutrition facts table format for the product, through steps with closed-ended questions (yes/no) on the type of food and the shape and size of the packaging. This work, inserted in the application used to structure the full and ready-to-be-printed label for the product, completes the simplification operation started with the translation into other languages of the ingredient list and other mandatory elements. Therefore, it seeks to be an example of how a broad and detailed legislation can be translated into a schematic level to be applied to an IT tool designed for companies, thereby facilitating the application of less known and dispersive regulations, saving time, and ensuring the product label compliance.

In un mondo in cui la globalizzazione è diventato un fattore comune nell’economia, anche l’Italia gioca ruoli importanti negli scambi internazionali. In particolare, nonostante le crisi, l’export del settore agroalimentare italiano nell’ultimo anno è cresciuto rispetto al 2020. Per le aziende esportatrici del settore è importante essere sempre al passo con le normative non solo europee ma anche di altri Paesi del mondo, per far in modo che il prodotto alimentare rispetti tutti i requisiti previsti dalle normative dei Paesi importatori. Questa mole di Regolamenti, con i loro eventuali aggiornamenti, può rappresentare però un ostacolo per alcune aziende, specie di piccole-medie dimensioni. Questo lavoro di tesi è stato progettato e realizzato per semplificare, attraverso un applicativo (Foodoc), la gestione delle informazioni nutrizionali da riportare in etichetta. Partendo dalla normativa, in questo caso da quella Canadese, il Food and Drugs Regulations, cioè il regolamento sugli alimenti e sui farmaci, è stato redatto un albero decisionale che raggruppa: - le “eccezioni” (o casi particolari), cioè le tipologie di alimenti con una tabella nutrizionale speciale, apposita, e - gli alimenti “esclusi” dall’obbligo di riportare la tabella, ma anche - i “formati”, in base alle dimensioni e forme del packaging -utili nel definire quale tipologia di tabella è necessaria-. L’albero decisionale può consentire, attraverso degli step con domande a risposta chiusa (sì/no) sulla tipologia di alimento e sulla forma e dimensione del packaging, di arrivare al tipo di formato di tabella nutrizionale più adatta al prodotto che l’azienda vuole commercializzare. Questo lavoro, inserito nell’applicativo che serve per strutturare l’etichetta completa per il prodotto, già pronta per essere stampata, va a completare l’operazione di semplificazione che l’applicativo si propone di portare avanti, già come fa con la traduzione in altre lingue della lista ingredienti e degli altri elementi obbligatori. Vuole quindi essere un esempio di come si può tradurre una normativa ampia e dettagliata in un livello schematico da applicare ad uno strumento informatico studiato per le aziende, facilitando l’applicazione di normative meno conosciute e dispersive, risparmiando tempo e garantendo la conformità dell’etichetta del prodotto.
