Raboso Piave is an autochthonous and typical variety of the Veneto region, precisely in the eastern area. This variety expresses its potential at its best in this area thanks to the soil composition, which makes it a high quality product, recognized since 2013 with the DOCG designation 'Raboso del Piave, Borgo Malanotte'. There are several clones of this grape variety that can have compositional differences and that can contribute to further improve the quality of the wine. In particular, in this thesis the potential of two clones of Raboso Piave grafted on two different rootstocks were characterized: 43, 110 Richter 2018 (code 1)/43, 101-14 2018 (2)/461, 110 Richter 2018 (3)/461, 101-14 2018 (4). In both clones, there were significant differences in berry size and pulp/peel ratio as well as in the extraction of coloring substances (anthocyanins). As for anthocyanin extraction during fermentation, kinetic curves tend to increase up to a maximum and then decrease at the end of fermentation. The sample richest in anthocyanins was clone 461, 110 Richter 2018. Tannins, as expected, showed different kinetics, with a higher amount in clone 43, 101-14 2018. The second part of the thesis considered the study and analysis of the chemical characteristics of the finished wines and their stability. In particular, it was found that clone 43 had a more stable color on average, but in this case the rootstock also had its effect, as the wines were more stable when the clone was grafted onto 101-14. These results are the preliminary basis for further studies with the goal of improving color and stability characteristics of Raboso Piave wine.
