Rapeseed meal ethanol-wash solutes (EWS) are wastes generated from the pre-treatment process used to remove antinutritional compounds from rapeseed meal before the protein extraction. This study aims to optimize the fortification of rapeseed oil with the optimum extract, previously obtained from EWS. This optimization was performed using Response Surface Methodology (RSM) by considering the combinations concentration – time of homogenizing the sample with the oil as the assessed variables. The fortification of rapeseed oil with the optimum EWS extract delayed the oxidation up to 61%, when applying the optimum parameters 35% - 8.12 min for concentration – time of homogenizing, respectively. Therefore, EWS could be an alternative to synthetic antioxidants.
Ethanol-wash solutes (EWS) sono degli scarti generati dal processo di pretrattamento utilizzato per rimuovere i composti antinutrizionali dalla farina di colza, prima dell'estrazione delle proteine. L’obiettivo di questo studio mira ad ottimizzare la fortificazione dell’olio di colza con l’estratto migliore precedentemente ottenuto dagli EWS. L’ottimizzazione è stata eseguita utilizzando la Response Surface Methodology (RSM), considerando come variabili le combinazioni concentrazione – tempo di omogenizzazione del campione di olio. Applicando come parametri ottimali valori di concentrazione di estratto del 35% e tempi di omogenizzazione di 8,12 min, è stato possibile ritardare fino al 61%, l’ossidazione dell’olio di colza. In base ai risultati ottenuti, l’utilizzo degli EWS potrebbe rappresentare un’alternativa all’uso degli antiossidanti sintetici.
