With this thesis we intend to evaluate the breeding technique of two different poultry species in the same breeding structures, the guinea fowl and the chicken. The breeding of the two species is practiced at different times but in the same structures, resulting in an alternative to the breeding of broiler chickens alone. In the first part of this work, the most up-to-date data regarding the national production of chicken and guinea fowl meat are presented, followed by the explanation of how the Italian poultry meat sector is organised. All stages of breeding have been described, from the arrival of the chicks to the sending of the animals to the slaughterhouse, analyzing in particular the differences in the management of the two species during the entire production cycle, but also the similarities that allow them to be bred in the same breeding facilities. To provide an application example of this type of breeding, eight production cycles were examined, carried out at the Dal Maso Mirco company. In four cycles broilers were reared, while in the other four guinea fowls. After having provided a description of the company examined and of the sheds where the animals are bred, the most important production parameters found in each production cycle are examined (% mortality, duration of the production cycle, average weight at the end of the cycle, average growth daily rate and conversion index). The breeding performance obtained from the two species at each cycle was subjected to statistical analysis.
Con questo elaborato si intende valutare la tecnica di allevamento di due specie avicole diverse nelle stesse strutture di allevamento, la faraona e il pollo. L’allevamento delle due specie è praticato in tempi diversi ma nelle stesse strutture, risultando un’alternativa al solo allevamento del pollo da carne. Nella prima parte di questo lavoro vengono esposti i dati più aggiornati riguardanti la produzione nazionale di carne di pollo e di faraona, in seguito viene spiegato com’è organizzato il settore della carne avicola italiana. Sono state descritte tutte le fasi dell’allevamento, dall’arrivo dei pulcini fino all’invio al macello degli animali, analizzando in modo particolare le differenze nella gestione delle due specie durante l’intero ciclo produttivo, ma anche le somiglianze che permettono di allevarle nelle stesse strutture di allevamento. Per fornire un esempio applicativo di questa tipologia di allevamento sono stati presi in esame otto cicli produttivi, svolti presso l’azienda Dal Maso Mirco. In quattro cicli sono stati allevati broiler, mentre negli altri quattro faraone. Dopo aver fornito una descrizione dell’azienda presa in esame e dei capannoni in cui sono allevati gli animali, vengono esaminati i parametri produttivi più importanti riscontrati ad ogni ciclo produttivo (% mortalità, durata del ciclo produttivo, peso medio a fine ciclo, accrescimento medio giornaliero e indice di conversione). Le prestazioni di allevamento ottenute dalle due specie ad ogni ciclo sono state sottoposte ad analisi statistica.
