DNA BARCODING IS A MOLECULAR IDENTIFICATION METHOD THAT INVOLVES THE USE OF SHORT DNA SEQUENCES, COMING FROM ONE OR MORE SPECIFIC GENES, TO UNIQUELY IDENTIFY A SPECIES. DNA-BASED MOLECULAR TECHNIQUES ARE EMERGING AS A STANDARDIZED, RAPID AND EFFECTIVE METHOD FOR IDENTIFYING BIODIVERSITY IN VARIOUS FIELDS, INCLUDING THE FOOD INDUSTRY. THIS THESIS PROVIDES AN OVERVIEW OF THE METHOD AND ITS GENERAL APPLICATIONS, WITH PARTICULAR ATTENTION TO APPLICATIONS IN THE FOOD INDUSTRY. CASE STUDIES RELATING TO THE IDENTIFICATION OF COMMERCIAL AND HEALTH FRAUDS, THE DETECTION OF ALLERGENIC FOODS AND THE MONITORING OF FOOD PESTS WILL BE PRESENTED. THESE APPLICATIONS WILL MORE SPECIFICALLY CONCERN CERTAIN FOOD CATEGORIES, SUCH AS SPICES, SEAFOOD, NUTS, HONEY, AND HALAL MEAT. THE THESIS HIGHLIGHTS THE ADVANTAGES OF THIS MOLECULAR TECHNIQUE COMPARED TO TRADITIONAL METHODS, AS WELL AS SOME LIMITATIONS IN IDENTIFYING ANIMAL AND PLANT-BASED FOODS. IN CONCLUSION, IT ALSO PRESENTS SOME FUTURE APPLICATION PERSPECTIVES, PROVIDING A COMPLETE AND UPDATED VIEW OF THE RESEARCH FIELD.
IL DNA BARCODING È UN METODO DI IDENTIFICAZIONE MOLECOLARE CHE PREVEDE L’UTILIZZO DI BREVI SEQUENZE DI DNA, PROVENIENTI DA UNO O PIÙ GENI SPECIFICI, PER IDENTIFICARE IN MODO UNIVOCO UNA SPECIE. LE TECNICHE MOLECOLARI BASATE SUL DNA STANNO EMERGENDO COME METODO STANDARDIZZATO, RAPIDO ED EFFICACE PER IDENTIFICARE LA BIODIVERSITÀ IN MOLTI CAMPI APPLICATIVI, COMPRESO IL SETTORE ALIMENTARE. QUESTA TESI FORNISCE UNA PANORAMICA DEL METODO E DELLE SUE APPLICAZIONI GENERALI, CON PARTICOLARE ATTENZIONE ALLE APPLICAZIONI NELL'INDUSTRIA ALIMENTARE. VERRANNO PRESENTATI CASI DI STUDIO RELATIVI ALL'IDENTIFICAZIONE DI FRODI COMMERCIALI E SANITARIE, ALLA RILEVAZIONE DI ALIMENTI ALLERGENICI E AL MONITORAGGIO DEGLI INFESTANTI DELLE DERRATE. QUESTE APPLICAZIONI RIGUARDERANNO PIÙ SPECIFICAMENTE ALCUNE CATEGORIE ALIMENTARI, QUALI, SPEZIE, PRODOTTI ITTICI, FRUTTA A GUSCIO, MIELE E CARNE HALAL. LA TESI EVIDENZIA I VANTAGGI DI QUESTA TECNICA MOLECOLARE RISPETTO AI METODI TRADIZIONALI E ALCUNE DELLE SUE LIMITAZIONI NELL’AMBITO DI IDENTIFICAZIONE DEGLI ALIMENTI DI ORIGINE ANIMALE E VEGETALE. IN CONCLUSIONE PRESENTA INOLTRE ALCUNE FUTURE PROSPETTIVE APPLICATIVE, OFFRENDO COSÌ UNA VISIONE COMPLETA E AGGIORNATA DEL CAMPO DI RICERCA.
