In recent years, the increased interest in exotic mushrooms by the Western world has led to a growth in the production sector. Among them, Lentinula edodes, commonly known as Shiitake, represents one of the leading products of exotic mushrooms due to its nutritional, medicinal and gastronomic properties. This thesis describes the characteristics of cultivated mushrooms with special reference to Lentinula edodes, cultivation structures and the organisation of a mushroom farm. The cultivation phases of the Shiitake mushroom are described in more detail: the climatic requirements, the uses of the spent mushroom compost and the main diseases that can damage the mushroom during production. Finally, the various types of post-harvest storage are described. Since it is a medicinal mushroom, the main medicinal and nutritional properties of Lentinula edodes have been listed and discussed in detail in this thesis.
Negli ultimi anni, l’aumento di interesse per i funghi esotici da parte del mondo occidentale ha portato ad una crescita del settore produttivo dei funghi coltivati. Tra questi Lentinula edodes, comunemente noto come Shiitake, rappresenta uno dei prodotti di punta dei funghi esotici, grazie alle sue proprietà nutrizionali, medicinali e gastronomiche. In questa tesi sono descritte le caratteristiche dei funghi coltivati con particolare riferimento a Lentinula edodes, le strutture di coltivazione e l’organizzazione di una fungaia. Si è ritenuto opportuno approfondire le fasi colturali del fungo Shiitake: le esigenze climatiche, gli utilizzi del composto esausto di fungaia e le principali patologie che possono danneggiare il fungo in fase di produzione. Infine sono descritte le varie tipologie di conservazione del prodotto in post-raccolta. Trattandosi di un fungo medicinale in questa tesi ne sono state elencate ed approfondite le principali proprietà medicinali e nutrizionali.
