This review examines current literature, recent experimental data, and advanced analytical techniques, such as Liquid Chromatography-Mass Spectrometry (LC-MS) and multi-omics methodologies, to evaluate milk and compare it to soy-based plant beverages. LC-MS, combined with omics technologies, offers powerful tools for detailed profiling of milk9s components, such as proteins, lipids, and metabolites. These techniques enable precise and continuous monitoring, which is essential for ensuring milk quality and safety. The ability to detect adulterations is crucial for food safety, adulterations can indeed pose significant public health risks and undermine consumer trust. Advanced analytical methods improve the ability to detect these issues with high precision, ensuring product integrity and quality. Identifying the species of origin is also essential for traceability and authenticity. Comparing animal milk with soy-based plant beverages is crucial to evaluate available alternatives and providing informed recommendations to consumers. While animal milk offers numerous health benefits, including high-quality proteins and essential nutrients, soy milk presents an alternative with a different nutritional profile and benefits. Providing accurate information about these options allow consumers to make informed dietary choices. The goal is therefore to improve quality assurance and food safety practices and to offer valuable insights to both consumers and food industry professionals.
Questa tesi si propone di esaminare la letteratura attuale, i recenti dati sperimentali e le tecniche analitiche avanzate, come la Cromatografia Liquida combinata alla Spettrometria di Massa (LC-MS) e le metodologie multi-omiche, per valutare il latte e confrontarlo infine con le bevande vegetali a base di soia. LC-MS, combinata con le tecnologie omiche, offre strumenti potenti per la profilazione dettagliata dei componenti del latte. Queste tecniche consentono un monitoraggio preciso e continuo, essenziale per garantire la qualità e la sicurezza del latte. La capacità di rilevare adulterazioni è cruciale per la sicurezza alimentare, poiché queste possono rappresentare rischi significativi per la salute pubblica e minare la fiducia dei consumatori. I metodi analitici avanzati migliorano la capacità di rilevare queste problematiche con elevata precisione, garantendo l'integrità e la qualità del prodotto. Identificare la specie di origine è inoltre fondamentale per la tracciabilità e l'autenticità. Il confronto tra latte animale e bevande vegetali a base di soia è essenziale per valutare le alternative disponibili e fornire raccomandazioni informate ai consumatori. Mentre il latte animale offre numerosi benefici per la salute, tra cui proteine di alta qualità e nutrienti essenziali, il latte di soia rappresenta un'alternativa con un diverso profilo nutrizionale e altri benefici.
