The aim of this thesis is to explore the evolution of the social function of the banquet, from the dawn of human history to the present day, and to analyze if and how the concept of conviviality has changed over the centuries. Through interdisciplinary research involving history, anthropology, sociology, art and gastronomy, I will try to analyze the cultural, political and economic dynamics that have shaped the way human beings gather around a table and food to celebrate, communicate, socialize and create bonds. In the first part of the thesis we will explore the role of the banquet in prehistory and ancient civilizations as a sacred ritual, a moment of celebration and an instrument of social cohesion. Through the passing of the centuries and the succession of eras, with the evolution of societies, we will analyze the changes in food practices and banquets in the context of the Middle Ages and the Renaissance, a period in which the tables set by aristocrats acquire value as manifestations of political power and social status. Next, we will focus on the Modern and Contemporary Age, examining the rise of public catering and the transformations of food consumption practices in industrialized society; In particular, we will try to understand how the advent of fast food has influenced the social and cultural dynamics related to food, questioning traditional concepts such as conviviality, communion and cultural identity.
L'obiettivo di questa tesi è esplorare l'evoluzione della funzione sociale del banchetto, dall'alba della storia umana fino alla contemporaneità, e analizzare se e come il concetto di convivialità sia variato nel corso dei secoli. Attraverso una ricerca interdisciplinare che vede coinvolte storia, antropologia, sociologia, arte e gastronomia, cercherò di analizzare le dinamiche culturali, politiche ed economiche che hanno modellato il modo in cui l’essere umano si riunisce attorno ad un tavolo e a del cibo per celebrare, comunicare, socializzare e creare legami. Nella prima parte della tesi esploreremo il ruolo del banchetto nella preistoria e nelle civiltà antiche come rituale sacro, momento di festa e strumento di coesione sociale. Attraverso il passare dei secoli e il susseguirsi delle epoche, con l’evolversi delle società, analizzeremo i cambiamenti delle pratiche alimentari e dei banchetti nel contesto del Medioevo e del Rinascimento, periodo in cui le tavole imbandite degli aristocratici acquisiscono valore come manifestazioni di potere politico e di status sociale. Successivamente, ci concentreremo sull'Età moderna e contemporanea, esaminando l'ascesa della ristorazione pubblica e le trasformazioni delle pratiche di consumo alimentare nella società industrializzata; in particolare, cercheremo di capire come l'avvento dei fast food abbia influenzato le dinamiche sociali e culturali legate al cibo, mettendo in discussione concetti tradizionali come convivialità, comunione e identità culturale.
