Italian pig farming is projected into the breeding of heavy pigs (160 kg at 9 months of age) mainly for the production of PDO dry-cured ham. Breeding and production are regulated by specific production specifications that have recently been modified and this means that the feed intakes will have to be reviewed, in particular the energy and amino-acid intakes necessary for the animal to grow. The aim of the test is therefore to define the correct nutritional intakes in order to: guarantee maximum efficiency of food conversion; reduce the use of resources and environmental impact; continuing to guarantee a high quality of the legs intended for the production of PDO dry-cured ham. In the test in question, 96 pigs were bred, divided into 4 different food groups. Each group was assigned a feed with a different protein content (calculated on the basis of the limiting amino acid, which in this case is lysine). The feeds formulated for the 4 different food groups contained an increasing level of lysine. The consumption of the individual animals was monitored via feeding stations and the body weight and the thickness of the back fat were periodically recorded. The data collected were used to develop growth curves of the body composition.
La suinicoltura italiana è proiettata nell’allevamento del suino pesante (160 kg a 9 mesi d’età) principalmente per la produzione di prosciutto crudo DOP. L’allevamento e la produzione sono normati da specifici disciplinari di produzione che attualmente sono stati da poco modificati e ciò comporta il fatto che dovranno essere rivisti gli apporti di mangime, in particolar modo gli apporti di energia e di amminoacidi necessari all’animale per il suo accrescimento. Lo scopo della prova perciò è quello di definire i corretti apporti di nutrizionali al fine di: garantire la massima efficienza di conversione alimentare; ridurre l’impiego di risorse e l’impatto ambientale; continuando a garantire un’elevata qualità delle cosce destinate alla produzione del prosciutto crudo DOP. Nella prova in oggetto sono stati allevati 96 maiali, suddivisi in 4 diversi gruppi alimentari. Ad ogni gruppo è stato assegnato un mangime con un contenuto proteico (calcolato sulla base dell’amminoacido limitante, che in questo caso è la lisina) differente. I mangimi formulati per i 4 diversi gruppi alimentari contenevano un livello crescente di lisina. I consumi dei singoli animali stati monitorati tramite stazioni di alimentazione e periodicamente è stato rilevato il peso corporeo e lo spessore del grasso dorsale. I dati raccolti sono stati utilizzati per elaborare delle curve di accrescimento della composizione corporea.
