This paper aims to identify the hygienic-sanitary parameters and potential microbiological dangers, determining the total microbial count and the presence of Enterobacteriaceae, coagulase-positive Staphylococcus aureus and E. coli O157.
Il latte d’asina sta riscuotendo un crescente interesse in Europa grazie alle sue proprietà ipoallergeniche, immunomodulanti, antimicrobiche e per il suo effetto sulla salute umana. Questo elaborato ha come scopo l’identificazione dei parametri igienico-sanitari e i potenziali pericoli microbiologici, determinando la conta microbica totale e la presenza dell’Enterobacteriaceae, gli Staphylococcus aureus coagulasi positivi ed E. coli O157.
