Food transition represents a key step to address global issues regarding health, ethics and environmental sustainability. This thesis explores the reasons for changes in food models, from prehistory to the present day, with particular attention to the spread of plant-based diets in Italy and Europe. Through a targeted analysis of scientific articles and the evaluation of various cohort studies, the nutritional values and any nutritional deficiencies linked to a plant-based diet are examined. This is followed by an analysis of the health benefits, of the negative aspects caused by an excessive consumption of meat, the ethical implications regarding animal rights and environmental impact. The results show that, despite some social and cultural barriers, plant-based diets are a concrete and valuable opportunity for improving health and environmental impact. However, to reach these goals governments, companies and consumers have to work together in order to overcome today’s challenges.
La transizione alimentare rappresenta un passaggio fondamentale per affrontare le sfide globali legate alla salute, all’etica e alla sostenibilità ambientale. Questa tesi esplora i motivi legati ai cambiamenti nei modelli alimentari a partire dalla preistoria fino ai giorni odierni, con particolare attenzione alla diffusione delle diete plant-based in Italia e in Europa. Attraverso un’analisi mirata degli articoli scientifici e la valutazione di diversi studi di coorte, vengono esaminati i valori nutrizionali e le eventuali carenze nutrizionali legati a tale scelta alimentare. Segue un percorso d’analisi dei benefici per la salute umana e un piccolo approfondimento sugli aspetti negativi a cui il consumo smodato di carne può portare, le implicazioni etiche legate al rispetto per la vita animale e gli impatti sull’ambiente. I risultati evidenziano che, nonostante alcune barriere culturali e sociali, le diete vegetali sono un’opportunità concreta per migliorare la salute e l’impatto ambientale globale, si sottolinea però la necessità di partecipazione e collaborazione di governi, aziende e consumatori per riuscire a vincere le sfide odierne.
